Happy New Year! I decided to make my New Year's sake this year, a Junmai Daiginjo from my hometown of Morimasu in Kanagawa. I went to the sake brewery's direct sales office last year and bought it. It is located in a wonderful mountainous area and I remember how excited I was. It was a perfect match with my festive New Year's dinner!
A collaboration between a sake brewery in Kanagawa Prefecture and Odakyu Line. At an OX near a certain Odakyu Line station.

I had a classical image of this sake, but it was overturned in a good way.
It's nice to be able to try various brands from 1 sake.
Start with the Arabashiri on the right side of the picture... The first sip has a sweetness, but it is more like a shrieking sensation, and the sourness spreads as the sip progresses.
Mori Masu Junmai Daiginjo Koganei Shuzo
Sake degree +2.0
Rice polishing ratio 40
Aromatic and dry.
It is so refreshing that it goes well with a strong-flavored gingerbread.
Delicious, but not enough to make me want to buy it again...
