When I went on a business trip to Mito City in Ibaraki Prefecture, I bought a lot of things at a local liquor store after hearing a lot of stories.
He was a very friendly person and we had a good conversation, so we bought a lot of sake and whiskey.
The aroma is modest
The taste is fruity and sweet, with a strong sake feeling!

I couldn't help but pair it with raw oysters, lol.
We still have some more to buy, so we can enjoy them for a while!

The taste is sweet and sour like plum wine. The aftertaste is crisp and refreshing.
As it gets closer to room temperature, the flavor of the rice comes out and it becomes more relaxed.
It seems to open up even more when heated!
But this is the first time I've had this slight plum wine feel.

Tonight we're celebrating with a Juntai Genshu from the No. 10 series, made by Mito's Akari-san, who has (supposedly) challenged the possibilities of the No. 10 yeast.

Citrusy sweetness and acidity make it a refreshing drink.

It seems to be good for before soba.
It is Suifu Boast Junmai Ginjo Hitachinishiki. As the endorsement says, it is a good sake with a firm umami and a good acidity. It tastes better when it is not too cold.

Mito's Meiri Sake Brewery, which is famous in a sense, produces "Suifu Boast" separately from its mainstay "Vice Shogun.
Another famous sake brewer, Toji Kikuchi, has revamped the label with a new No. 10 yeast.
Although Toji Kikuchi has already left for another brewery...
