The brand name Matsuo comes from Matsuo Taisha Shrine in Kyoto, the god of brewing.
The brewery brews all of its sake with Yamae-Nishiki, and a liquor store in Shiga started doing business with them, so they changed their planned sake to Matsuo at a moment's notice.

This is Takahashi Sukesaku Sake Brewery. They are a pioneer of Yamae-Nishiki sake brewing rice, and all of their sake is made from Yamae-Nishiki.
This is a limited edition sake that is shipped to coincide with the birthday of the poet Kobayashi Issa (May 5). The brewery is located in Shinanomachi, Kobayashi's birthplace and final home. In spite of this, there were customers before and after me, and I felt the popularity of the brewery. I can only be convinced.
It is made with Sanke Nishiki, a sake rice unique to Nagano Prefecture!
It is far from floral or mellow.
It has no peculiarities and can be drunk at room temperature, lukewarm, or chilled.
It has a supporting role of a number 2 batter who is good at bunting, like a drifter, Nakamoto Kouji.
I paired it with fried chicken and pickled cucumbers.

A crisp, dry sake with a slightly old-fashioned flavor. The aftertaste is more sweet than sharp, leaving the impression of a lingering sweetness.

Matsuo "Kamimizuuchi" Junmai Ginjo Namaishiginjyo Namaishiginjyo Namaishiginjyo, Kaminomizuuchi County, Nagano Prefecture, Japan, is a Junmai Ginjyo Namaishiginjyo Namaishiginjyo, tank top pressing. For three consecutive years since 2020, Takahashi Sukesaku Shuzo has been using Yamae Nishiki, locally grown in the prefecture, for all the sake it produces. Yamae-Nishiki is now brewed by more than 40 breweries in the prefecture, but Takahashi Sukesaku Brewery has been involved in experimental cultivation and brewing of Yamae-Nishiki since seven years prior to 2020, when the variety was registered. Matsuo's raw yeast production is likely to be reintroduced for the first time in several years.
Mild apple aroma. There is a clear monosaccharide-like sweetness that can be found in other Matsuo series, but there is a nuance that seeps into the tongue along with umami. The acidity with an axis underlies the flavor, which seems to be mellow yet clean and harmonious. It is a bottle that can be enjoyed as a mealtime sake, despite its complexity.

But it is soft on the palate, a little light and smooth for this type of sake.
The rice flavor is beautiful.
