I think I have not had Matsuo since Pon-chan brought it to me at the Kansai Sake no Wawa Hankai Train Off-line Meeting 🤔.
The aroma is mild, but the ginjo aroma seems to have deepened slightly with aging.
The mouthfeel is soft and smooth with a calming texture that gives a slight sense of maturity.
The sweetness and acidity are also very mild, giving a good impression of calm and cleanliness.
While showing some complexity from the aging process, the beautiful sweetness and umami spread softly and flow smoothly.
It is likely to warm up considerably, but it is also delicious cold.
It is not a smooth saké, but it is a saké that can be drunk slowly and easily.

There was a shuffling sound when the bottle was opened. The top aroma is completely of yogurt and cheesecake. When you drink it, you can taste sweetness or gentle cheesecake flavor with a pleasant slight bitterness that instantly clears up. This is delicious. It is not a sake, but a dessert. I drank only the top clear liquid without shaking it much, and the remainder became sloppy like yogurt, so it would be better to eat it with a spoon in a dessert bowl than in a cup. The aroma is that of yogurt. It would be better to drink it by itself as a dessert. I thought it would be perfect as a substitute for ice cream to refresh the palate after a night of drinking, or as a dessert for men with a sweet tooth, not to mention women. I think I could do a lot of good if I had 300 ml in my refrigerator as an adult dessert with a shelf life of 4 months.

I bought three kinds of sake at Kasuga because I had never seen them before.
It seems that they have won various awards and the production quantity is very small.
It is bottled and needs to be kept cold. I opened the bottle. The taste is soft but crisp, something I have never experienced before. Of course, it is neither sweet nor dry. It has a clear taste. It's delicious. I found myself drinking it 💦.
The top aroma is a faint scent of junmai (pure rice). When you drink it, it is a little sweet and dry, with a clean and crisp taste. It is delicious. The hint of aroma is slightly fruity. Matsuo has a nice sweetness and umami of rice, while Togakushi has a refreshing sourness. The slight sourness gives it a refreshing taste. It is best on a steaming night. It could also go well as a food sake.
