It is delicious. It seems to go well with both fish and meat dishes. It has been a long time since I have tasted Matsuo, but this one is so good that I want to repeat it.

On the way home from our annual hot spring & ski trip, we had some time to spare before the Shinkansen departed, so we visited a sake store near the station 😃.
Local sakes available were Hokko Masamune, Mizuo, and Ayu Masamune, but the one that caught my eye was the new MADARAO, a junmai ginjo nama sake made with Yamae Nishiki 😋.
This is also the annual opening of Izakaya Shinkansen 🤗.
When opened, it has a faintly fruity aroma, and on the palate, there is a light carbonation characteristic of the raw, which is a pleasant stimulus to the tongue, and I think it is a crisp, slightly dry sake 🥰.
