Made from Yamadanishiki produced in Hagi City. It has a fruity aroma and elegant sweetness, and is easy to drink.
It has a good aftertaste and is delicious without tiring of drinking.
Not much info on the mysterious Toyo Bijin 💃✨.

Toyo Bijin, a famous sake brewed in Hagi, Yamaguchi Prefecture, boasts high popularity nationwide.
Shunyo is a variety that has been attracting attention in recent years for its low protein content, large grain size, and 4mmp, which produces a lot of sweet and refreshing aroma like a muscat. This junmai ginjo sake is made from 50% polished rice and carefully brewed.

When opened, it had a strong rummy flavor, so it was stored at ice temperature for a few days and reviewed after it settled down.
Refreshing white peach mouthfeel, immediately followed by concentrated white peach flavor and sugar.
Peach skin to apple skin bitterness, also strong.
A lingering aftertaste of quite a bitterness.
Balanced in spite of its strength, but I felt it was a little too strong in many ways.
