The acidity is rather strong and gorgeous, but the taste is clean. It goes well with fried food and rich dishes such as ajillo.
It has been a while since I had a drink at a restaurant that has a large lineup of sake with a particular focus on Japanese sake.
The first was Himezen. It was my first time to drink it, but I took it because of the cute jackets.
It is sweeter than I imagined. It's soft and thick. I can't drink a lot. It seems to be good for those who are not good at sake but would like to enjoy it from now on.
I also contributed a bottle of sake that the brewer worked hard to sell for 5 days (lol) Ichinokura, my favorite sake.
It is originally dry, but hiyaoroshi is a little milder. It has a different umami and mellowness from the usual dry sake. But it is delicious because it is dry!
Clear and colorless, with aromas of cooked rice, honeysuckle, and pear. The attack is rather strong, with a refreshing acidity, a mild sweetness, and a rather long finish.
Today I was on holiday duty and had a busy day, so I ate out at a sushi restaurant in a hurry.
I think this sake has little umami, but it was delicious with the flavor of the rice. It had a nice balance of flavors with a clean aftertaste.

Apart from the other 🍶 lined up in the dining area, only one of them was sitting in a prominent place.
The rice used was 100% Miyagi sake rice, Kuranohana.

When poured into the sake cup, it has a refreshing fruity aroma reminiscent of green apples and pears, and a calm aroma that is not too gorgeous.

When you take a sip, an elegant sweetness spreads in your mouth, and the mouthfeel is gentle and mellow. It has a gorgeous and fruity taste like apples and bananas. I suggested soda as a way to drink "Himezen," but I serve it myself.
It doesn't have the bitterness of added carbonation, but it is a sweet and sour Irohasu soda that somehow makes you feel intoxicated after drinking ...... because of its low alcohol content.
