I couldn't tell if I was comparing a little bit at a time. The junmai sake is softer, and the higher the price, the clearer and more transparent it becomes.

I have 4 varieties in my stock at home, but I wonder when I will be able to open the bottle 😅.
It has a very good balance between the fruitiness derived from nama-shu, the mellow aroma of rice, and the exquisite lactic acidity. I was too lazy to let it sit in the cellar for an extended period of time, but it was clear to me that good sake will not be defeated in a year or so if stored properly.

This sake has a mild aroma with sweet acidity, a fresh sweetness or umami flavor that spreads, a sharp acidity, and a crisp, short aftertaste.
This is also sake that I brought in.
It was about 6 years old and had been forgotten in the fridge at work.
It had been stored in the fridge for a long time, so I thought it was okay, but when I opened the bottle and smelled it, it didn't seem to be twisted.
It has a slight yellow tinge and the flavor comes through with a bang. It would be great if it were heated up.

I would like to introduce a sake from a small sake brewery in my hometown, Takaoka City, Toyama Prefecture. As the label on the photo says, the number of shipments is small and hard to find.
It is only available at the store that has been wholesaling it for a long time. You have to stand in line for about two hours to buy it. The company is a sake brewery that does not mass-produce sake, does not increase the number of varieties, and strives to brew sake with sake quality as its first priority. The character "Katsukoma" was written by the artist Masuo Ikeda.
The taste is definitely junmai ginjo with a richness, throatiness, no doubt. ‼️
