I stopped by Chiba for work and bought it at a liquor store in front of the station.
This is the first time I've tried Chiba sake. It's nice to meet you. I'm a bit of an idiot, but I look forward to working with you.
The shopkeeper recommended that I buy this afs nama sake from Kidoizumi Brewery. I was told that the sake was made using a single-stage brewing process, where the rice and koji are brewed at once, instead of the three-stage brewing process used for sake.
When poured into a glass, the color was slightly golden. It has a sour taste that makes your tongue swoon, followed by a faint sweetness. It gives the impression of licking a citrus fruit like a lime.
This is a bottle that will make you feel the depth of sake.
Fruity Shaoxing wine. The acidity is similar to that of white wine Riesling. I know a lot of people don't like it, but I feel something like the philosophy of Kidoizumi.
Without the aging aroma, it is a calcareous German wine with lots of minerality and acidity.
It would go well with Chinese food. I like it.

Kidoizumi afs Stratae Chiba Prefecture Sake

It's been matured for about 3 years, so the color is amber!
It was served at room temperature.
It is based on the strong sweetness of the noble sake making, and there is a thick sweetness like a caramel because of the aging.
And the sourness is amazing!

I had it with Mont Blanc which has more astringent skin.
The heavy sweetness of the Mont Blanc suppressed the sourness of the afs, and the flavor of the afs came to the fore.

Thankfully, it was a gift. Apparently, it's a crowdfunded sake, made by assembling several different types of aged sake from the 1970s. It's been over a month since I opened the bottle, and I'm slowly savoring it.
The color is a light brown with a reddish tinge rather than amber, and the aroma is sweet like vanilla and caramel. It has a sweet aroma of vanilla and caramel, with a hint of malt. The palate is sweet with savory brown sugar and caramel, and the acidity spreads quickly, but the fruitiness is almost non-existent, and it is probably the sweetness and flavor of the grains. The body is about medium with no horniness at all. The aftertaste lasts for a long time, with little bitterness and a little astringency at the end. It's like drinking a brandy, but it's not like a distilled spirit, it's like a fine Shaoxing wine or a sherry (cream?). It has an impression of sherry (cream?).
I'd like to pair it with something like whiskey or brandy, or maybe chocolate with more cocoa.

Normally, sake is brewed by dividing the ingredients (rice and malted rice) into three stages, but this Ahusu is brewed in one stage, so the sweetness and sourness are emphasized.
