Rice used is Hida Hidahomare from Hida Almost no sense of maturity To put it simply A light, dry sake with umami. I would say it is a light, dry sake with a great umami flavor. It is good as a food sake! It was a great match with grilled fish.

Tenryo, which I ordered at a meal on my trip. It was a freshly brewed and stored Honjozo brewed with Hidahomare. I usually don't drink Hidahomare, Honjozo, or Nama-Seizou, so I thought it would be a good opportunity to drink it. The color was crystal with a slight yellow tinge. The aroma is quite mild, with mineral and earthy notes. When you drink it, it has a slightly fruity overtone. Next comes a sense of minerality and a hint of sweetness. There is also a slight white ball-like feeling. The acidity is smart and not too assertive. Bitterness appears a little at the end. The lingering aftertaste is pale and slowly fades away with the bitterness. As is typical of honjozo, it has the sake-like flavor that is generally imagined by those who do not normally drink sake, but it is a food sake with a fruity character that is typical of freshly stored sake. It's meant to be served at ryokans, as it goes perfectly with fish, vegetables, and other Japanese dishes! I've been drinking a lot of sake that can be drunk on its own, so I'm very satisfied with my first "food sake" in a long time! It may not be a hit with those who only accept easy-to-understand sake, but for those who like dry sake, or those who want to enjoy a marriage between sake and food, or to complement food, this is a naturally delicious sake.

The finest daiginjo-shu, a collection of sake that falls drop by drop. Tenroku Haiyori" is a daiginjo-shu, the highest grade of sake brewed by Tenryo. As the saying goes, "Sake is the blessing of heaven," the best quality rice for sake brewing, Yamada-Nishiki, is used, polished to 35%, and brewed in Hyogo Prefecture. This is a very precious daiginjo-shu produced under thorough quality control using the tobin enclosure method. The long-lasting low-temperature brewing process gives it a beautiful and refreshing aroma like the finest cherries, a pleasant texture on the tongue, a sharp throat feel, and a pleasant nose-pleasing aroma, all of which make it a well-balanced product. The quality and condition of the rice changes from year to year, so it is not a "perfect sake," but it is a daiginjo that can only be produced by a brewery that strives for high quality sake brewing. The passion that the toji and the brewer put into sake brewing can be felt.

Gero City, Gifu Prefecture, Japan. Tenryo Sake Brewery Co. Uratenryo Junmai Ginjo Nama-Shu Purchased at a sake shop on an old street in Hida Takayama. It is bottled and stored for a year to a year and a half. One of the 3㌥ bottles (4/9) I brought back from my trip. It is served cold. The color is a pale yellow. The top aroma is mild, with a hint of alcohol coming from the back. The mouthfeel is clear, with a touch of acidity. On the palate, the rich rice flavor spreads out and the acidity, which is typical of junmai sake, mixes in and expands. The finish is quite firm and spicy. Ingredients: rice (domestic), rice malt (domestic) Rice used: 100% Hidahomare Rice polishing ratio: 55 Alcohol content: 17%.
