The body is very unique, fluffy, and different from all the other sake I've had. The aroma is not very strong, and the taste is light and deliciously dry.
The first cup of the Tsuchida Festival was the first Honor Kunimitsu at room temperature.
It has a mild umami that you would not expect from a low-polished rice, and the acidity from the sake's sake yeast gives it a sharpness.
The rice flavor with just the right amount of bitterness and saltiness dominates the palate, yet it maintains its freshness without becoming flabby, and for a junmai sake, it remains refreshing all the way down the throat. Nevertheless, the 90% rice polishing ratio makes it a high-level gem with a solid drinking experience.
