Event at Namba Parks It's a food and beverage event called "HOSHIZORA STAND" with a sake corner! There were so many people waiting in line for 45 minutes because there were so many different types of sake. The guy who heated up the sake said he was sorry it took so long to get in line! Well, it's good to see so many people! It's an old sake with a wonderful color, slightly thickened and neatly aged. It has a nice savory, Jack Daniel's-style bourbon whiskey sweetness. As it cools down, the acidity becomes clearer and sharper. The original liquor seems to be quite acidic. The acidity is said to be 2.1. I always order it at the recommended temperature, but the person who warmed it up said it was good at any temperature, so I asked him to heat it up! It was really good at all different temperatures! Yoshimura Hideo Shoten is the best! As expected, I didn't have the guts to wait in line anymore, so I had to go to the nearest liquor store and buy a bottle of Akiruka Sesshu Nose to continue!

It was passed from one non-drinker to another, and after being aged for a year, it was passed on to me! And it's a one year aged Honjozo from Kurumazaka sake brewery...too much for me! I don't know what this sake really tastes like, but it seems to have a rich flavor and sharpness! It has a distinct savory aroma, not like a new sake! This is a sake for aging. When heated, the flavor is even more powerful! The aroma is good, and the original quality of the sake is even more apparent.

On recent weekends, I try to digest the SAKE POST that I have accumulated. Sake is a castle lover's dream 🍶. Nippon Castle has a faintly sweet aroma and a slightly sweet mouthfeel. However, it had a clear throat and not a bad aftertaste. I had the impression that it was refreshing for a junmai daiginjo.

Wakayama sake drinking 2🐼 I've had Kurumazaka, but I've never had Negoro, so I challenged myself! Focusing on Wakayama rice and water from Wakayama, It seems to be made in an earthen-walled warehouse. The gold part of the label is a motif of the big pagoda of Negoroji Temple, which is mentioned in the name, and the atmosphere of a temple in the middle of a Japanese flag is very atmospheric. 🇯🇵 It has a little bit of color, but it's not too acidic. It is mild and gentle, not too assertive and easy to drink. It may be good lukewarm or at room temperature. It's not sold in stores, so I'll order it 🫠.

Kumano Kodo no Shizuku Yellowish and lightly aged. I can understand why the description says "cold, at room temperature, or in the bottle". I first tried it cold, and it had a mellow aroma with umami, followed by lactic acidity and a sharp taste. It was surprisingly delicious! It is absolutely delicious even if it is served in a glass!

This is a Junmai Daiginjo from "Nihonjo", which I received as a hometown tax payment. It's a little dry. There is no aroma and no depth to it. It's just a little bit of rice flavor. There is nothing special about it. However, this type of sake would make a great supporting player. Sushi at Uokumi (huge!) and fried tachi fish, along with assorted tempura from the local supermarket. The sushi is not synergistic, but not bad. The fried tachi-ogai is good because of the rich flavor of the fried batter (although I wouldn't say it goes well with it). The tempura was neither good nor bad. Maybe it goes well with boiled vegetables, pickles, or anything with a strong flavor.

The unfamiliar symbol "27BY" refers to the brewing year. The date of manufacture is 2022.1, so does this mean the date it was bottled? I assume it's an aged sake, and decide to have it warmed. I started with it at room temperature, and it was dry. I can feel a slight sense of aging, but I think it could also be served chilled. Next, I had it warmed to about human skin temperature. I rarely drink it warm, so I don't have a standard for whether it goes well or not. However, I think it goes well with all the dishes I paired it with. I wanted to pair it with sashimi, but unfortunately we didn't have any, so I used fish cake instead. I thought it would go well with sashimi. I wonder if it would go well with sweet soy sauce. It goes really well with mackerel simmered in miso and chopped green onions. It's also good with pickles. I used to buy cheap sake from the supermarket when I heated it up, but this one seems to be different from those. I can't be sure, though, because I remember drinking it a long time ago. Also, it seems to go well with Japanese style hot pot (soup stock type). Next time, I would like to try pairing it with nabe, even if it is not the same sake, with a sake labeled BY. Hot sake is not so good. It might be better with a more mature sake, but so far I haven't found it to be good hot.

Sake from Yuasa-cho, Wakayama Prefecture, which I received as a hometown tax donation. For a donation of 12,000 yen, you can get two four-pack bottles. The other one is a Junmai Daiginjo, also from Nihonjo. I plan to enjoy it at a later date.

Opened on July 18, 2021 Purchased at a Japanese liquor store in Zoshigaya It shows the traditional taste of the old days, with a rich and umami taste, but also clean and crisp, what a strange feeling! Have it with a bowl of rice topped with pickled bonito ^ ^. I think it goes better with the one which is pickled with rich taste ^ ^ ^.

Nihonjo Negoro Junmai Ginjo 27BY 16.5% 58 This is one of the two bottles of Wakayama sake that I received as a hometown gift. Nihonjo is the brewer of Kurumizaka. In my experience, tax-paid hometown sake is not so easy to underestimate. How was it this time? The first sip of the bottle. It has a marvelous mature taste. That's because it's a 27BY aged sake. It doesn't have the smell that badly aged sake tends to have, but it has depth. The depth is reminiscent of woody earth, and as the temperature rises, the woody feeling increases, which is also good. It was the right decision to pay tax in Wakayama. The name "Negoro" comes from the name of a place in Iwade City, Wakayama Prefecture. It is read as "Negoro". There are many sake breweries that are named after places, but there are many cases where you learn about the name of the place after learning about the sake of the place, so I think sake is also a study of geography and history.
