It shows the traditional taste of the old days, with a rich and umami taste, but also clean and crisp, what a strange feeling! Have it with a bowl of rice topped with pickled bonito ^ ^.
I think it goes better with the one which is pickled with rich taste ^ ^ ^.

This is one of the two bottles of Wakayama sake that I received as a hometown gift. Nihonjo is the brewer of Kurumizaka.
In my experience, tax-paid hometown sake is not so easy to underestimate.
How was it this time?
The first sip of the bottle. It has a marvelous mature taste. That's because it's a 27BY aged sake. It doesn't have the smell that badly aged sake tends to have, but it has depth. The depth is reminiscent of woody earth, and as the temperature rises, the woody feeling increases, which is also good. It was the right decision to pay tax in Wakayama.
The name "Negoro" comes from the name of a place in Iwade City, Wakayama Prefecture. It is read as "Negoro". There are many sake breweries that are named after places, but there are many cases where you learn about the name of the place after learning about the sake of the place, so I think sake is also a study of geography and history.
