This is a Junmai Daiginjo from "Nihonjo", which I received as a hometown tax payment.
It's a little dry. There is no aroma and no depth to it. It's just a little bit of rice flavor.
There is nothing special about it. However, this type of sake would make a great supporting player.
Sushi at Uokumi (huge!) and fried tachi fish, along with assorted tempura from the local supermarket.
The sushi is not synergistic, but not bad.
The fried tachi-ogai is good because of the rich flavor of the fried batter (although I wouldn't say it goes well with it).
The tempura was neither good nor bad.
Maybe it goes well with boiled vegetables, pickles, or anything with a strong flavor.

I bought some pickled sardines to go with a glass of white wine, and played around with them.
It goes so well!
It turns out that this sake goes well with vinegared food.

I tried it with Basque cheesecake.
It's hard to say, it's not that they don't go well together, it's more that the sake feels like a very tasty water, which is probably good.
