The last of the day was a series of drinks left to the owner, who, again, asked us to choose sake that we would not normally choose ourselves.
We were served a Niigata sake recommended by Mr. Kawada, the owner of CHUIN, which he always buys every year.
Kenshin was a first for me!
The aroma is...ladylike, sweet and juicy with a hint of koji (malted rice) including the acidity typical of sake, with pleasant aromas of grapefruit, melon and banana.
On the palate...smooth, mellow, and super juicy!
With all due respect, it is overflowing with juiciness that is hard to believe this is a Niigata sake!
While a gentle dryness peeks out a bit, the umami, including a slight bitterness, flows nicely and spastily.
The aftertaste is medium short.
This is delicious!
It has no alsophony, and if you were to give it to me blind, I would say it was a junmai type.
This is the kind of sake that overturns my biased stereotype of Niigata sake and makes me feel ashamed of my lack of knowledge and experience.

The freshness and vibrancy of freshly pressed sake, the aroma brought out by the aruzome and the sharpness at the end.
