Tonight, I'm going to open this bottle for the first time in a long time & the long layover series. Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. It gently wraps the sourness of the ume crystal and washes it away, and it goes surprisingly well with it, making it a good drink. ☺️

Continued from yesterday. The second bottle is a sake called Kenshin from Niigata. This bottle was given to me by a friend of my son. The timing was not good, so I was finally able to open it. I took a sip, thinking it would be a little yellowish and dry. I took a sip. Surprisingly, it had a mild barrel sake flavor. It can be used not only with sashimi, but also with a slightly stronger flavor. Delicious! (^O^)

It is smooth and tasty, with a rich flavor. I imagine Lord Kenshin has a quiet fighting spirit, so I guess it's just as the name implies.

The third one is a humble one. Fruity aroma but subdued. Slight apple and muscat aroma. The first sip was sweet, contrary to what I expected. Since it was a Niigata sake, I imagined it to be light and dry, but it was mellow and umami, with a concentrated flavor of rice that made the snacks go faster and faster 😋. We became friends with the regulars sitting next to us and had a lively sake discussion, drinking Kenshin together.

It may be an assumption, but it tastes like a mix of the best parts of Niigata and Nagano sake, perhaps due to its proximity to the border between the two prefectures. I think it would be classified as dry in Nagano.

At standing drinking CHUIN on a previous day. The last drink of the day. (This is a staggered post.) I had enjoyed Kenshin the first time I drank it at chuin-san. I thought the label was quite different from the usual stoic kanji-only label, but it seems to be a collaboration with the manga "Izakaya Maruyo" (居酒屋丸よ) and limited to Maruess Sake Shop and Kanese Sake Shop 🍶. The appearance is a pale yellow-green. The aroma is mild and refreshing. It has a gentle herbal feel and a sweetness in the aroma that is typical of sake. In the mouth, it flows smoothly and refreshingly. Discreet sweetness, a herbal feeling, and a cool, refreshing acidity escape. It flows from the spread of refreshment, then swells and sharpens moderately. The lingering aftertaste is moderately sweet and refreshing. It was the kind of sake I would like to drink casually in everyday life. It was a beautiful way to end the meal. Thank you for the sake 🍶.

Good evening, Pon 😃. With chuin, if it's small, I can drink it slowly because they leave me alone even if I'm taking notes while I'm thinking and drinking slowly with 40ml of one sake 😊🍶. I'd like to learn more about this kind of casual drinking too: ☺️
