The sake purchasing expedition went to Niigata Prefecture. One of the purchases was made at Takahashiya in front of Echigo-Yuzawa Station. Makihata Akatsuki is brewed by Takachiyo Sake Brewery using labor-intensive flat rice polishing and micro-bubble rice washing. The koji rice is Gohyakumangoku produced in Uonuma, and the kake rice is Takananishiki produced in Uonuma. The alcohol content is a low 13%. The color of the sake is not clear, but light cloudy. The aroma when the bottle is opened is fresh, with a light green apple aroma. The impression is refreshing. The first mouthfeel is soft and juicy, and the spreading acidity gives the outline of green apple, but it quickly fades away with a crisp sharpness, giving a sense of lightness. This area feels like a Niigata sake 😊. I felt the sourness of the sake poured into the glass weakened with time and passage of time. I think this is better chilled and served cold.

The sun came out this afternoon and it was hot in Echigo-Yuzawa. On a day like this, I thought it would be nice to have a very cold drink, so I went to the cooler area. I remember drinking it last season and enjoying it, so I had a Choshamori again today. I like the way it's a bit chilled, and it fits my mood perfectly. I was told that it is a limited-edition product, hand-packed on the day of the first tank. I paired it with spinach with sesame paste and butterbur sprouts tempura. Wild vegetables are coming out soon. They are the best accompaniment for sake (or is it the other way around?!). It is the best accompaniment to sake (or is it the other way around?!). It is a little bit strong, but not too strong. It has a strong flavor, so the bitterness of the butterbur doesn't overpower the sweetness of the sesame paste. Since it is a pure sake, the alcohol content is a little high (17%).

It has been snowing since yesterday, and the ski slopes are in conditions that are hard to believe it is March. I went looking for heated sake and found this bottle. (I went looking for heated sake and found one.) It was a Choujamori, which I had never seen before, and which is sold only in Niigata Prefecture. The moment I opened the bottle, the aroma was so sweet. When heated, the aroma became even sweeter. The taste is robust, but has a light aftertaste. We've included a photo of the back of the label. It's an all-around great sake that can be served at a variety of temperatures. It can be drunk at different temperatures depending on the situation.

I did it again. When I bought it, I was going to heat it up because I saw that "the flavor blooms even more when heated to 55 degrees Celsius," but I drank it cold, and it went down a treat. It was paired with oden (Japanese style rice dumplings) and went well with sakura ebi-ten (shrimp tempura)! I drank it quickly! It has a robust flavor, so it doesn't lose out to fried fish paste. The last time I drank it cold, I tried to heat it up, but it was Kirinzan. This year, they call it a light snowfall, but it's still snowing in March. I think I'll be able to enjoy hot sake a little more, so I'm going to go looking for heated sake. (I heard someone say that heated sake is also good during the hot season...)

Tomorrow is a national holiday! I finished work early and had yakitori today. It is a junmai ginjo without any peculiarities and goes well with either sauce or salt. It's so light and smooth, I'll finish the bottle the day I open it.

A bottle selected for in-store tasting. Kimi no I Shuzo offers a warming set for tasting. I tasted it cold at first, and then warmed it up to lukewarm. I decided on this bottle immediately. The alcohol content is a bit high at 17%. It is 100% Yamadanishiki. My husband only drinks it cold, so he would be surprised if I told him I drank it warmed. (Until about half a year ago, I only drank junmai daiginjo cold. My sake world has become richer in my opinion). Lukewarm heating is the best. Since my meal was junk and I had beer with it, this is my after-dinner drink today. The snack was salted boiled Niigata green soybeans!

Today there was a paid tasting at Takahashiya at the east exit of Echigo Yuzawa station, so I stopped by. I tasted and purchased various items, but first was a cup of Yukio Junmai Sake because I wanted a bottle. I paired it with spicy pork shabu-shabu and chilled it down to a cool temperature. Delicious, a deeply delicious supper. It was fun to talk a lot with the brewer of Aoki Sake Brewery - the tasting.

When I saw it in the store, I thought I would heat it up, but in fact, I chilled it to the last minute and drank it cold in no time at all. I was surprised that Kirinzan has such a bottle, but next time I'll try it hot. I'll have to go look for it, since it seems to be limited in number. And a thermometer is a must.
