The aroma was mild and cool most of the time. Attack and texture very simple. After a mild spiciness, the minerality was most noticeable. The wine finishes with a sense of umami bitterness in the second half.
It is one of the simplest wines I have had recently. It can be drunk refreshingly in summer, and the minerality and bitterness in the latter half invites drinking. If I were to use an analogy, it would be silence. Although there is nothing spectacular about this wine, it is a perfect sipper to drink calmly, as if you are looking out at a quiet lakeside and drinking water.

Slightly sweet nose. From the mellow attack, a gentle sweetness and a stimulating spiciness arrive almost simultaneously. A hint of pineapple mixed with alcohol rises and finishes with a lingering pungency and bitterness.
It may be too spicy to drink alone. It was delicious with dried hokke (hokke).

Aroma reminiscent of grape-like sweetness. In the mouth, sweet and sour taste like blackcurrant in syrup. It leaves a slightly sweet aftertaste, but it finishes without being sticky.
It reminds me of a recent drink of rainfall. I have the impression that it would be in tune with sweet foods such as after-dinner cakes. In contrast to the stiff etiquette, this sake has a sweet taste. It has a sake level of -30.

The bottle is opened. The cork blows off vigorously. Fireworks. As expected of the summer night sky. A wonderful performance.
The aroma is fresh and sweet. A clean attack with a rummy sweet and sour taste. A slightly tangy, slightly fizzy and slightly pungent taste. It finishes with a lingering sense of rummy and slight bitterness.
On the way to the site of a fireworks display, wearing a yukata (light summer kimono). The night stalls are lined up. A little thirsty, I look at them and see a bottle of Ramune. I buy one and take it in my mouth. The sweetness and carbonation spreads in a sizzle. Clutching the condensed bottle, I headed for the venue. Just as I finish the soggy bottle of Ramune, a fireworks display comes booming overhead! The sky was darkening before I knew it. Before I know it, the sky is dark and a cool, slightly damp breeze caresses my cheeks as the fireworks display begins. This is the kind of sake that makes you feel the dusk of summer. ガルスelegant
Elegant ginjo aroma. Beautiful sweet and sour taste that spreads from a clean attack. The woody aroma rises and is tightened with a tangy spiciness.
From the aroma to the taste, it is elegant and clean. I would like to pair it with simple vegetable dishes with a hint of greenness. ガルスElegant and dry.
The impression is of fresh aroma and steamed rice aroma living together. After a gentle sweet and sour taste, a fresh sweet umami taste takes over, and it finishes nicely with a lingering spicy and slightly bitter taste.

Refreshing and slightly sweet aroma. From the sharp attack, simple acidity, minerality and umami. It finishes crisp and clean.
There is almost no sweetness, and although it may be classified as dry, it is easy to drink without a sharp taste. It is a good sake to drink on a hot and humid day.

An aroma reminiscent of sourness and lactic acidity, like strawberry yogurt. In the mouth, a sense of effervescence felt immediately after a mellow attack, light sweetness and tangy spiciness. In the clean texture, you can taste complex acidity, umami, and bitterness, and a refreshing hint of aroma rises to the top. At the end, the taste is crisp and clean, leaving a pungent and numbing sensation on the tongue.
It is positioned as a mysterious flavor in the Kaze no Mori series. The taste is unimaginable from the aroma. It is a taste of chaos, where the tongue encounters various experiences.

Recently, I started comparing the Kaze no Mori series of sakes and enjoyed the depth and three-dimensionality of the high rice polishing ratio. In the midst of all this, I was wondering what sake to drink for my wife's birthday. Something I have usually seen wouldn't be special, nor should it deviate from my taste preferences.
At Sake-no-Mimura, I was introduced to "Amezure," which is said to be popular among women, so I bought some. The etiket was stylish and elegant. I was told that it was a sake with a strong sweet and sour taste. It is made from Yamahai and Yamadanishiki with a rice polishing ratio of 90%. I am looking forward to seeing how it tastes with these specs. I am looking forward to it.
The aroma reminds us of sweetness like cotton candy, and a noble aroma like brandy is also wafting in the air. From the mellow attack, the aroma and sweet flavor of wine-soaked pears fills the mouth with a sizzling sensation. While leaving a strong aftertaste of its aroma, the tangy and sweet taste remains for a while and finishes with a sharp taste.
This brings to mind the scene of an invited dinner in a foreign country. After enjoying the course meal and chatting, slices of brandied LaFrance pear served on a white plate. The aroma and sweetness of the brandy wafted through the air, and when eaten, the juiciness and fragrance filled my mouth, making it the perfect dessert.

White wine, the aroma reminds of fresh acidity sweetness among grapes like white wine and white grapes. The mild attack is contrasted with a strong acidity that appears immediately and tightens up. It then finishes with a fruity sweetness and a tangy spiciness, followed by complexity and bitterness.
Immediately after opening the bottle, there is a sense of effervescence and freshness, but as the day goes on, the effervescence decreases and the acidity and spiciness become more pronounced and calm.
This sake allows you to enjoy the changes in experience from aroma to sharpness, as if a long story is born from a single sip of the flavor. It is like a story that begins with youthful sweet and sour memories of youth, and as it goes through joy, anger, sorrow, and pleasure, it is like a story of growing up while tasting the difficulties and complexities of life. ガルスThe aroma is like a mix of steamed rice and white grapes. In the mouth, a fruity sweet and sour taste spreads, and a grape-like hint of aroma comes up strongly. The finish is sweet with a hint of sweetness.
Well balanced and easy to drink. It would be a good match for a meal with white wine. ガルスThe aroma is complex and slightly cool. In the mouth, there is almost no sweet and sour taste, but rather a profound and refreshing flavor that spreads and lingers.
Mature taste. Seems to be easy to match with meals. People who like whiskey may like it. ガルスThe nose has a fruity aroma, more like lush pear than grape. After the sweet and sour taste spreads immediately on the palate, it simply converges and finishes crisp.
Compared to 657, the second half is lighter and easier to drink. If you want to match it with a meal, this might be the one. If you want to taste it well, 657. ガルスstrong grape
Aroma of grapes. The aroma of grapes, but the impression is powerful with a hint of earthiness. In the mouth, it has a strong sweet and sour taste. It has a hint of grape aroma, and it finishes quickly.

The first Eiko Fuji. A sake that is reputed to be delicious by all. What is it like?
A cool, refreshing aroma. Comes in clear in the mouth and maintains the same clarity. Then, a gentle melon-like sweetness and aroma, and at the same time, spiciness appears. At the end, it finishes with a slight bitterness while retaining the spiciness.
It was like seeing a fragment of Eiko Fuji's ability. This junmai ginjo has a great design ability to give this clarity and sweetness at the necessary stage. The sweetness comes in the latter half of the bottle, so there is no problem at all if it is matched during the meal. I can only say that it is as good as I expected. I suddenly want to try other grades. ガルスA windswept forest without a sense of schwag?
The aroma reminded me of slightly ripe sweet and sour like grapes. From the clean attack, a slight sweetness, sourness, and bitterness spread out, each asserting itself, and then it ended with a lingering aftertaste. As it is a draft sake, the flavors are not yet fully acclimated to each other.
It is very easy to drink, and the sweetness is only in the top aroma, so it is a sake that can be enjoyed even during a meal.
For some reason, the taste of Kaze no Mori came back to me like déjà vu. I felt that this sake is well designed from the aroma to the taste.

This is the first time for me to drink Kaze no Mori without being drunk. I am thankful for this time, as I have been unable to give any feedback other than that it tastes good after drinking as much as I can at izakaya (Japanese style pubs).
The aroma reminds me of sweet and sour between crisp and ripe like grapes. In the mouth, a strong fizziness is felt in the clean attack, and from there, a complex rich flavor of sweetness, acidity, and bitterness. Although each has a strong assertiveness, it is wonderful that it maintains an exquisite sense of balance. It finishes cleanly with a slight bitterness.
I liked this sake because it has a complex flavor, just as it was in the brewer Kuheiji.
I would like to try many other grades.
I discovered a new sake shop this time and I have a feeling that I will be visiting frequently in the future because of their extensive lineup, just like a specialty store in Kaze no Mori. It is far from the station, but great for tastings. RecommendedContentsSectionView.title
