Recently, I started comparing the Kaze no Mori series of sakes and enjoyed the depth and three-dimensionality of the high rice polishing ratio. In the midst of all this, I was wondering what sake to drink for my wife's birthday. Something I have usually seen wouldn't be special, nor should it deviate from my taste preferences.
At Sake-no-Mimura, I was introduced to "Amezure," which is said to be popular among women, so I bought some. The etiket was stylish and elegant. I was told that it was a sake with a strong sweet and sour taste. It is made from Yamahai and Yamadanishiki with a rice polishing ratio of 90%. I am looking forward to seeing how it tastes with these specs. I am looking forward to it.

The first Eiko Fuji. A sake that is reputed to be delicious by all. What is it like?
A cool, refreshing aroma. Comes in clear in the mouth and maintains the same clarity. Then, a gentle melon-like sweetness and aroma, and at the same time, spiciness appears. At the end, it finishes with a slight bitterness while retaining the spiciness.
It was like seeing a fragment of Eiko Fuji's ability. This junmai ginjo has a great design ability to give this clarity and sweetness at the necessary stage. The sweetness comes in the latter half of the bottle, so there is no problem at all if it is matched during the meal. I can only say that it is as good as I expected. This is the first time for me to drink Kaze no Mori without being drunk. I am thankful for this time, as I have been unable to give any feedback other than that it tastes good after drinking as much as I can at izakaya (Japanese style pubs).
