Refreshing aroma like young grass with a slight hint of sweetness. Very refreshing sweetness and acidity from a very clean attack. Immediately after, there is a tangy stimulation and a complex flavor derived from the sake yeast, with a refreshing and slightly alcoholic overtone. It finishes with a slight bitterness.
Reminiscent of Kuroryu, it is a refreshing sake with a low sweetness. Even if there is no beer, this sake is refreshing enough to get you through the summer.

Mild cider aroma. From a clean attack, bitterness appears along with sweetness and acidity, and the stimulation of sparkling. It finishes with a tangy and bitter taste.
While I have recently been drinking mellow sparkling sake with secondary fermentation in the bottle, this one was sparkling with carbon dioxide gas blown in to give it a tangy carbonation. Along with the clarity of the original Junmai Daiginjo, this was an adult sake with a refreshing and bitter taste.

Mild steamed rice-like aroma. From the simple attack, sweet acidity spreads. The second half is clear and crisp.
The taste reminds us of Peardouri, a sake brewed by the same brewery. This sake is gentle and nostalgic.

The aroma reminds of crisp sweet and sour taste. In the mouth, one also senses a gentle sweetness with a predominance of acidity. The overall flavor is clear, but it finishes with a beautiful acidity.
Although not a summer sake, it is a delicious sake that can be drunk crisply even in summer. The beautiful acidity and clarity invite drinking. I drank it in no time.

The aroma was mild and cool most of the time. Attack and texture very simple. After a mild spiciness, the minerality was most noticeable. The wine finishes with a sense of umami bitterness in the second half.
It is one of the simplest wines I have had recently. It can be drunk refreshingly in summer, and the minerality and bitterness in the latter half invites drinking. If I were to use an analogy, it would be silence. Although there is nothing spectacular about this wine, it is a perfect sipper to drink calmly, as if you are looking out at a quiet lakeside and drinking water.

Slightly sweet nose. From the mellow attack, a gentle sweetness and a stimulating spiciness arrive almost simultaneously. A hint of pineapple mixed with alcohol rises and finishes with a lingering pungency and bitterness.
It may be too spicy to drink alone. It was delicious with dried hokke (hokke).

Aroma reminiscent of grape-like sweetness. In the mouth, sweet and sour taste like blackcurrant in syrup. It leaves a slightly sweet aftertaste, but it finishes without being sticky.
It reminds me of a recent drink of rainfall. I have the impression that it would be in tune with sweet foods such as after-dinner cakes. In contrast to the stiff etiquette, this sake has a sweet taste. It has a sake level of -30.

The bottle is opened. The cork blows off vigorously. Fireworks. As expected of the summer night sky. A wonderful performance.

On the way to the site of a fireworks display, wearing a yukata (light summer kimono). The night stalls are lined up. A little thirsty, I look at them and see a bottle of Ramune. I buy one and take it in my mouth. The sweetness and carbonation spreads in a sizzle. Clutching the condensed bottle, I headed for the venue. Just as I finish the soggy bottle of Ramune, a fireworks display comes booming overhead! The sky was darkening before I knew it. Elegant ginjo aroma. Beautiful sweet and sour taste that spreads from a clean attack. The woody aroma rises and is tightened with a tangy spiciness.
From the aroma to the taste, it is elegant and clean. I would like to pair it with simple vegetable dishes with a hint of greenness. ガルスElegant and dry.
The impression is of fresh aroma and steamed rice aroma living together. After a gentle sweet and sour taste, a fresh sweet umami taste takes over, and it finishes nicely with a lingering spicy and slightly bitter taste.

Refreshing and slightly sweet aroma. From the sharp attack, simple acidity, minerality and umami. It finishes crisp and clean.
There is almost no sweetness, and although it may be classified as dry, it is easy to drink without a sharp taste. It is a good sake to drink on a hot and humid day.

An aroma reminiscent of sourness and lactic acidity, like strawberry yogurt. In the mouth, a sense of effervescence felt immediately after a mellow attack, light sweetness and tangy spiciness. In the clean texture, you can taste complex acidity, umami, and bitterness, and a refreshing hint of aroma rises to the top. At the end, the taste is crisp and clean, leaving a pungent and numbing sensation on the tongue.
It is positioned as a mysterious flavor in the Kaze no Mori series. The taste is unimaginable from the aroma. It is a taste of chaos, where the tongue encounters various experiences.

Recently, I started comparing the Kaze no Mori series of sakes and enjoyed the depth and three-dimensionality of the high rice polishing ratio. In the midst of all this, I was wondering what sake to drink for my wife's birthday. Something I have usually seen wouldn't be special, nor should it deviate from my taste preferences.
At Sake-no-Mimura, I was introduced to "Amezure," which is said to be popular among women, so I bought some. The etiket was stylish and elegant. I was told that it was a sake with a strong sweet and sour taste. It is made from Yamahai and Yamadanishiki with a rice polishing ratio of 90%. I am looking forward to seeing how it tastes with these specs. I am looking forward to it.
The aroma reminds us of sweetness like cotton candy, and a noble aroma like brandy is also wafting in the air. From the mellow attack, the aroma and sweet flavor of wine-soaked pears fills the mouth with a sizzling sensation. This sake allows you to enjoy the changes in experience from aroma to sharpness, as if a long story is born from a single sip of the flavor.
