Another round of drinks at Rokugan. This is the well-known Yukino Kayasha. It is an autumn sake, hiyaoroshi. It has a strong flavor. Serve with fried matsutake mushrooms, autumn vegetables, or black beef with tomato miso. Polishing ratio 55%, 16% alcohol by volume.

A well-known sake at Rokugan. It has a moderate umami, refreshing acidity, and goes well with meals. It goes well with a bowl of steamed figs with sake, grilled bonito, or grilled hamo (pike conger). Polishing ratio 50%, 15% alcohol by volume.

A fresh sake that is a little tangy in the mouth. However, it is easy to drink and is perfect as a food sake. I have had the Kafuda sake before, but this was the first time I noticed that it had a tank number. I paired it with paprika and lotus root tempura, and black wagyu beef tataki with leek sauce.

I have become a big fan of Yukino Kayasha. It has a wonderful balance of sharpness and umami. I was blissfully happy when I matched it with winter seafood such as kohada bite-sized sushi, bowls of white miso soup with unko and ebiimo, and amberjack sashimi.
