This bottle is dedicated to Katsunichimei Takahashi, a sake brewing god enshrined in the Miwa area and said to be the oldest living toji (master brewer). The result is a masterpiece that lives up to its narrative.
Even before pouring it into a glass, the floral aroma that rises to the surface is simply wonderful. The taste is very gorgeous and gorgeous, with a rich and impressive spread of sweet and sour tones.
In contrast, the Ash has a more minimalist and refined expression, with a delicate acidity and a meticulous bubbly feel that is typical of the Colors series.
It was a good comparison of two modern sakes that clearly showed the difference in direction.
