Compared to ordinary Nirvana Turtle, this special version 10th anniversary is very different. It is made using the Kijunshu process, and is remarkably sweet, with a very light pear flavor on the palate. However, it is not overly sweet like Yonotori, and has a perfect balance of sweetness and sourness. It is also attractive in that it has a moderate oak aroma that can be enjoyed.
It's been a while. Today we compared three kinds of Mimuro cedar. The Fukuro Shibori is light and has a slightly bitter aftertaste, while the Mokke Bodai Hashihashi is more clear and smooth. Personally, I like the woody aroma, so I recommend the Mokke Bodaihashi. In terms of price, I don't think that the cost of a 20,000 yen bag of shibori is that great.

My favorite flavor! The western pear flavor is outstanding! Very refreshing, not as sweet as Yonotori and not as bursting with texture as Flaxcato, but very easy to drink and delicious with a subtle floral aroma and a taste of western pear.
Wind Forest's "Summer Night Sky" was created with Alpha technology. It is still going strong, with a bubbly and melon taste. It has a low alcohol content of 10 degrees and a milling ratio of 70%, but it is still clear, sweet and sour, and well balanced.
Thanks to this tasting session, I had the opportunity to compare the 18 and 22 year old COSMOS. the 22 year old model expresses the aroma of oak and is rich in fruit notes. Specifically, the fruit is highly acidic, tastes of citrus fruits and lemon, and is bubbly on the palate. the 18 year model expresses similar oak aromas, but tastes of orange peel, is a bit bitter on the palate, and has a high acidity level. It tastes of tannic acidity, similar to wine, with more sweetness after a lot of drinking and more aftertaste than the 22 year old model.
This is one of the same Sake_Spring that I drank, and I highly recommend it! Its fruitiness is such a standout, as is the apple in its introduction. It has an explosive apple taste at the entrance, a nice balance of sweet and sour, and a never-ending aftertaste! People who like Jyushiyo should definitely try it!

It smells of green mango, the foam is soft when you drink it, the front section at the entrance tastes of lychee and the back section tastes of citrus peel, very refreshing. It has a distinct apple flavor and is very refreshing. It uses the same Akitsuho grapes, but this one is less sweet and has a more fruity aroma than 507. In terms of aftertaste, ALPHA has less of it, and it is a good choice to eat with sushi.
