Kyoto's famous sake, Matsumoto's Toyama is 100% Gohyakumangoku produced in Johata. The brewery chose the town of Johata, a city of history and nature, because they felt something that they could not produce with technology alone. Personally, I have been going to Shirobata every week for seven years. I don't think it has any strong characteristics, but for me it is a very enjoyable sake.

Compare with the Nakadori. It tastes as if the miscellaneous taste was taken out from the nakatori and the umami was added. It is good. I'm a sucker for unpressurized and low-pressurized! I'll buy another bottle.
In a good sense, it is easy to drink like water, but slightly sweet and slightly bitter at the end. It does not go well with strong-flavored snacks because the sweetness is overwhelming. Seasonal steamed vegetables are good.
The beauty of this sake is its aftertaste. Even after the sake is gone from your mouth, the complex flavor remains on your tongue. It is delicious. For me, it is a sake to enjoy the aftertaste.
It has a better balance than the Junjo I got before. This one is more to my liking. The freshness, gas, acidity, sweetness, and gorgeous aroma are all present without being overpowering, but it's not just an easy drink. It's not just easy to drink. I bought another bottle.
Nijiiro Bakuren This is a daiginjo made from Dewa no Sato from Haguro, polished to 33%, and unpasteurized. It has a good ginjo aroma, rice flavor and sweetness on the palate, giving the impression that it is a good sake. Immediately after that, the high alcohol asserts itself, and when it passes through the throat, it is stimulating as the name "super dry" implies, and there is a sense of enjoyment like when drinking distilled sake. It is rare to find a sake that gives such a different impression at the beginning and end, and for only 1,500 yen per 4-gallon bottle, it is a very enjoyable sake that you can feel the brewery's commitment to!
