A little strong and dry, the acidity is low, and it's refreshing and easy to drink. I think it was the best match for today's tuna. It seems that Bunkyo Ward and Tsuwano Town in Shimane Prefecture have an agreement as a place associated with Ogai Mori, and this is the reason why it is in stock.

It's crisp, clean and dry, with a strong sense of flavor. It is a perfect match with the sasazuke of the sea bream I bought in Fukui. It seems that they use a rice called Hyogo Nishiki which was improved from Yamadanishiki to make the sharpness stand out.
