This is a low alcohol, unfiltered, unpasteurized Junmai-shu using Yume-no-Ka rice grown by the brewer himself, and applying and developing the brewer's original Namamotake-zukuri method. Sake degree -26!!!!!!! Sake degree - 26 !!!!!!!!!!!!, acidity - 4.0 !!!!!!!!!!!! This is a great sake with a great specification.
The taste is even more avant-garde than the label, developed from an old-fashioned brewing method from the Edo period. The finish is like a light, sweet and sour Chardonnay white wine with high acidity, fresh and low in acidity.
