The smell on the palate is a clean, thin, acidic lychee. The aroma is thin but very elegant and noble. The taste is sweet with no aftertaste. The sweetness and gaseousness of the first attack disappear as soon as it passes down the throat, leaving behind a delicious watery taste. It is a dry sake, but very gentle. It is like drinking a morning dewdrop of reishi. Clear and delicious. It has a wild flavor, like the sweetness of rice mixed with the fragrance of ears of rice. It is best when paired with dishes that have a sour taste. It is also great with ponzu, tomatoes, vinegared chicken wings, and light chicken. I had the low-temperature cooked chicken breast with ponzu sauce mixed with green onion and grated maple leaf.

Sharp aroma. Juicy smell with fresh moisture, with a hint of pear. It is smooth and easy to drink like water. A bottle will be empty in no time. It has a sweetness and a refreshing taste when drunk without any habits. The aftertaste is small and does not linger in the mouth. The alcohol content of 16% does not make you believe that it is pleasant to drink. It is ideal as a food sake. No wonder it is so popular and hard to buy. It is one of the driest of all Tobiroki sake, with a moderate aroma that makes it easy to pair with food. It goes well with fatty fish, fried foods, and dishes with strong umami. In fact, it goes with everything. I paired it with cold yellowtail with garlic slices and soy sauce. The light sweetness is great. Thanks to the liquor store I always go to. A week after opening, the smell changed from pear to melon. The flavor has rounded out and is now at the heart of the melon. Little by little, the corners are coming off and I am enjoying the change in taste.

Everyone loves Nabeshima. Everyone loves Purple Label. It is not the smell of a specific fruit, but it is fruity. The smell of Sembikikiya, or the smell of various fruits comes out. It reminded me of peaches and young mangoes. The taste has a profound flavor with moderate acidity. The spread of umami and volume like when eating grapes. The impression is that the umami is stronger than the sweetness. A soft, kneaded fluid that can be felt on the tongue. While many sakes are alcoholic first, Nabeshima has a wonderful overall balance. It can be enjoyed before or during a meal. I paired it with seared octopus and it was absolutely delicious.

I've had snowballs a few times, but this is my first time drinking UA's snowballs. They have an assemblage that mixes 5 different types of rice. I haven't had a chance to compare the two, so I'm just going by past memories, but UA's seems fresher and gassier. The sweetness and bitterness of Snowball is stronger than UA, but UA is refreshing and dry, so it is easy to drink. The sweetness is moderate, and once you get used to drinking it this way, it may be better with a meal. I paired it with cured ham and cheese, and it is a very light drink that can be easily paired with any meal.

When I went back home, I found it for sale at a local roadside station. Local, after all, is great. It has a fresh sour smell like yogurt. The gas is strong right after opening the bottle, so the first sip has a sparkling wine-like feel. If you open the bottle slowly, the carbonation will settle down, but I can't wait. Once the gas settles down, you will feel a tingling and fizzy sensation in your mouth. The taste is refreshing and fresh. Unlike doburoku, it is strained so it has a mild, milky taste. I think it was thicker last year. This year, I think it is more silky and fine-grained. You can directly feel the umami of the rice. It is a refreshing and voluminous sake. It may go well with miso stew and cheese. I felt it also goes well with spicy food. It gives an image of refreshing dishes like curry and lassi.

The muscat flavor is felt first. Lychee follows thinly next. Arabashiri, the first sake from the new pressing. When chilled, the smell is light, but the taste is strong. The alcohol content is high at 18%, so when drinking it fresh out of the refrigerator, one can enjoy the change from spiciness to sweetness. As the temperature cools down, the alcohol volatilizes and the muscat aroma blooms. The taste is rounded and the sweetness stands out and the spiciness becomes less noticeable. Although it is a draft sake, there is almost no sense of gasiness. You can directly taste the freshness of the sake. It is best served with white-meat sashimi, shellfish, and other light dishes. It goes well with cold dishes. It is not a good match with fried or fatty foods, as the taste of the sake comes through while the oil remains on the palate. It is a dry sake, so it goes well with simmered fish, but since it is a raw sake, it goes well with lightly simmered fish, not sweet and spicy ones. ⭐︎Alcohol 18 ⭐︎Polishing ratio 65
