酒記「しゅき」
When I went back home, I found it for sale at a local roadside station.
Local, after all, is great.
It has a fresh sour smell like yogurt.
The gas is strong right after opening the bottle, so the first sip has a sparkling wine-like feel.
If you open the bottle slowly, the carbonation will settle down, but I can't wait.
Once the gas settles down, you will feel a tingling and fizzy sensation in your mouth.
The taste is refreshing and fresh. Unlike doburoku, it is strained so it has a mild, milky taste. I think it was thicker last year.
This year, I think it is more silky and fine-grained.
You can directly feel the umami of the rice.
It is a refreshing and voluminous sake.
It may go well with miso stew and cheese.
I felt it also goes well with spicy food. It gives an image of refreshing dishes like curry and lassi.
