酒記「しゅき」
The muscat flavor is felt first. Lychee follows thinly next. Arabashiri, the first sake from the new pressing. When chilled, the smell is light, but the taste is strong. The alcohol content is high at 18%, so when drinking it fresh out of the refrigerator, one can enjoy the change from spiciness to sweetness. As the temperature cools down, the alcohol volatilizes and the muscat aroma blooms. The taste is rounded and the sweetness stands out and the spiciness becomes less noticeable. Although it is a draft sake, there is almost no sense of gasiness. You can directly taste the freshness of the sake. It is best served with white-meat sashimi, shellfish, and other light dishes. It goes well with cold dishes. It is not a good match with fried or fatty foods, as the taste of the sake comes through while the oil remains on the palate. It is a dry sake, so it goes well with simmered fish, but since it is a raw sake, it goes well with lightly simmered fish, not sweet and spicy ones. ⭐︎Alcohol 18 ⭐︎Polishing ratio 65
