The last of this year's wine was Kaze no Mori Akitsuho 507.
It is refreshingly fruity, with an elegant sweetness followed by a moderately spicy aftertaste! Compared to other Kaze no Mori, it is more crisp and easy to drink.
Yamada-Nishiki, 35% polished rice. We had it at a tavern in Iwaki city! It is a delicious sake with a good mouthfeel, fruity aroma, slightly sweet taste, and a crazy good balance.
Sourness and a unique taste!
The description says "a very fermentation-like nuance, reminiscent of yogurt and cheese". It has a slightly Shaoxing wine-like aftertaste. It went very well with smoked cheese!
