Kushira" is brewed with Yamada-Nishiki grown in-house by Chiyo Shuzo, the brewer of "Shinomine".
The aroma is subdued. The aroma is subdued, and the taste is gaseous and dry.

It has a classic aroma. It has a unique aroma of koji malt. There is no gas, and after a moderate sweetness, the spiciness and umami come in a well-balanced manner.

It starts with a moderate floral and mellow flavor, and then quickly cools down, with a light spiciness in the aftertaste!
Junmai Ginjo Yamadanishiki

Smooth on the palate with a fruity sweetness and aroma, followed by a good acidity!
The last of this year's wine was Kaze no Mori Akitsuho 507.
It is refreshingly fruity, with an elegant sweetness followed by a moderately spicy aftertaste! Compared to other Kaze no Mori, it is more crisp and easy to drink.
Yamada-Nishiki, 35% polished rice. We had it at a tavern in Iwaki city! It is a delicious sake with a good mouthfeel, fruity aroma, slightly sweet taste, and a crazy good balance.
Sourness and a unique taste!
The description says "a very fermentation-like nuance, reminiscent of yogurt and cheese". It has a slightly Shaoxing wine-like aftertaste. It went very well with smoked cheese!
