This Waseda Enji has a strong relationship with Mine-no-Hakubai Sake Brewery. Three Hishiko varieties to be compared, plus three more to be drunk.
This time, the three youngest members of the Gekkoujo series, Sanrai, which competes against the master toji; Shin Ijima, a competing work with the same sake rice of that master; and the big winner, Hishiko Junmai Daiginjo Hiyaoroshi.
All are junmai daiginjos.
The master's Shin Ijima had the dignity of an adult.
Ummm, delicious.

My first drink at my first restaurant!
The food is good, the drinks are good! (My impressions are a bit messy)
The sake is very easy to drink! A little sweet on the palate? The introduction of the restaurant also said it was refreshing! The store's introduction also said it was refreshing.
Let's drink it again!
It has the aroma of freshly cooked rice and freshly baked bread yeast.
When you take a sip, it is light and smooth.
It has a slightly ripe, fruity flavor with a sweetness and umami like a sweet potato.
I like it.
Junmai Minenohakubai
Niigata Sake
Alcohol: 15% abv.
Rice polishing ratio: 65
One of a set of sake that I received from Niigata City's hometown tax payment.
The impression is that it is not very distinctive and tastes light.
