I attended the Japanese Sake Fest Osaka 2022!
We had a great time drinking at all 24 breweries' booths 🤣.
I'm still a bit confused at the end 🤣.
Kawatake Brewery booth in Mie Prefecture.
First of all, "Shiki" with a label I have never seen before.
I guess Hokosugi is more famous.
It is said to be made from Yumikataho, the mother of Yamada-Nishiki, a sake rice used only at this brewery.
The brewer told us to "drink this one" (🔴), and I will only write about the others that I drank.

I tried them all and they are all good😋.
I feel like each of them has a little bit of the characteristics of the theme.

Before the typhoon, this week's bottle, Shiki Sweet Hanayoshi Yamahai-brewed Junmai Ginjyo Nama Genjyo by Kawatake Brewing Co.
This is my first time drinking this brand. The fruity aroma has a weighty sweetness and acidity, but the aftertaste is not cloying, with a strong alcohol feel and a clean finish.
It's good for a small sip.
First time drinking the formula at home.
Fruity, apple-like aroma. The mouthfeel is clear and soft. As a day passes from the opening of the bottle, the soft umami appears, and the aftertaste has the weighty feeling of Yamahai. As the temperature rises, the umami becomes more robust.
Warmed up to 45°C, it has a soft sweet umami and some acidity towards the end. It's not bad heated.
New brand name from this year, iddle.
I think it was last year? I can't remember 😅.

In the mouth it has a sweet taste reminiscent of strawberries🍓🤔.
The aftertaste is also fruity sweet and sour with a nice crispness to it 😆.
Also, for a yamahai, there is almost no lactic acid bacteria taste.

It's a sake from the next prefecture, but I don't even see Hokosugi in the liquor stores I go to, so it's going to be hard to get 😅.

It's still not very well known 😅.
It's easy to drink for a traditional sake because it doesn't have much of a Yamahai feel 😆.
But some people might not like it because it's a bit heavy 🤔
Citrus aromas of lemon, orange, grapefruit, with green apple and sweet fruitiness. Extremely smooth, thick on the palate. Round and soft, with cereal umami notes, and hints of red apple and pear. Full yet mellow, medium finish.
Served room temperature, but probably better lightly chilled. May be interesting warmed to 35 degrees.
Photo right. At the tasting. Kawatake Brewing Company in Hokosugi started this new brand in October. It's a little more bitter than the typical Sanpai, but I think it's one of the easiest Sanpai to drink. It's not too sweet in spite of the name SWEET.
