The last sake of the festival is "Shiki". It is made from Yumikataho, a sake rice that can only be used at this brewery. They said they use all Yumigaho, but some of them are blended. I don't remember 😅

100% Junmai Daiginjo spec Yumigaho is used. Fresh, clear, and normally tasty, but not enough.
Hokosugi Yuzu Nigori Sake.
A liqueur with a crazy yuzu aroma and taste, made with the peel and juice. Delicious!

I drank
SHIKI FRESH
Junmai Daiginjo with a rice polishing ratio of 50%. The rice is 100% Yumigaho, which can only be used by Kawatake Brewery. It is a little too mature with a subdued feel 🤔I wish it had more impact since it is moderately priced.
This is the end of the Japanese Sake festival, but it is still going on🤣.
Rakuten Gacha. I was surprised to see that four different types of rice were used. The sweetness and umami of the rice spread out and there was no pungency or acidity.

Yamahai assemblage. Rare.
Sake quality is good. Quite good. Sake is smooth on the tongue and very clean. Goes in smoothly.
It has a strawberry-like aroma.
The taste is slightly sweet and juicy like fruit in the mouth. In the latter half, a gentle acidity like that of Yamahai finishes it off nicely.
I thought it was too light and thought the alcohol content was around 10 degrees, but in fact it is 15 degrees. It is a dangerous sake.
Be careful not to drink too much.
It is not a spicy liquor, but it is delicious. It has an elegance like wine. I wish it would spread among more people.
