As soon as you open it, it smells good and tastes delicious, but when you drink it, it is sharp and tasty!
It goes well with pei-yaki (tonpei-yaki without pork) because it matches the sweetness of the sauce. I think it would win a bit over salmon sashimi.
I liked it very much.
Pei Yaki⁈
This is the first time I have heard of it,
To be honest, I can't imagine what it would taste like if you took the pork out of tonpeiyaki!
Okonomiyaki without meat?
I'm embarrassed to say that I really just took the pork and added okonomiyaki sauce and mayonnaise as seasoning...so it tastes just like tonpeiyaki without the meat.
This sake has a firm sharpness. It has a good balance of moderate acidity and sweetness. It goes well with the flavorful Tompei-yaki. It won over salmon sashimi. It is delicious. ★★☆☆☆
Home drinking 30 bottles in 2024.
Hakutsuru-nishiki is the brother rice of Yamada-nishiki. But I had never heard of it, it must be delicious, and I wanted to try it! So I bought this sake.
It was a beautiful yet delicious sake with a strong umami flavor.
I had the luxury of comparing it with "Saku", which is also brewed with Hakutsuru-nishiki!
Date of production: February 2024
Rice: 100% Hakutsuru-Nishiki
Polishing ratio 49
Hakutsuru Nishiki, sake rice born at Hakutsuru Shuzo, is said to be a sibling of Yamada Nishiki in terms of genealogy.
So far, we have had Hakutsuru Nishiki-brewed sake such as Saku and Amego no Tsuki, and now we are going to try Toichi, which we have been curious about for a long time!
Sweet and gorgeous ginjo aroma!
The smooth mouthfeel is followed by a refreshing rice flavor and acidity, and then a pleasant lingering bitterness that finishes cleanly.
In terms of rice polishing ratio, this 49% polished rice ginjo-shu could be called a daiginjo.
The aroma is subdued but gorgeous, and the nose is filled with the aroma of rice.
The taste is gentle, but the umami is very strong.
It tastes like chewed rice and has a clean mouthfeel with no lingering aftertaste.
I drank it almost at room temperature, but I think this is the best sake.
It might shine even when heated.
The aroma is weak, the mouthfeel is clean, the sweetness is weak, and the flavor is strong. Is it weak in characteristics? I felt it was a gentle sake suitable for a mealtime drink.
It's been a while since I opened the bottle!
And it's not supposed to be a draft sake...
I put newspaper under it because it's takoyaki.
Shuwa shuwa~!
And it's not fruity!
They cut it with a bashful, and a little bit of sweetness comes at the end!
And a hint of alcohol...
Toichi is good after all!
Limited-Quantity Series of New Challenges for Saga Prefecture Sake Breweries
Saga-no-Hana, Saga Prefecture's original rice suitable for sake brewing
On the first day, it tasted sweeter than I expected, but it was delicious!
It was introduced as a perfect match with butter and cheese, so I gave it a try! It was surprisingly crisp and tight, which made it very interesting!
Sake from a business trip to Kyushu🍶.
The aroma is slightly acidic and has a mellow image before drinking.
The first impression is a slightly sweet taste with a delicious mouthfeel and acidity spreading out. The aftertaste is long and lingers in the mouth, a flavor that is typical of traveling.
