Home drinking 30 bottles in 2024. Hakutsuru-nishiki is the brother rice of Yamada-nishiki. But I had never heard of it, it must be delicious, and I wanted to try it! So I bought this sake. It was a beautiful yet delicious sake with a strong umami flavor. I had the luxury of comparing it with "Saku", which is also brewed with Hakutsuru-nishiki! Hakutsuru Nishiki, sake rice born at Hakutsuru Shuzo, is said to be a sibling of Yamada Nishiki in terms of genealogy. So far, we have had Hakutsuru Nishiki-brewed sake such as Saku and Amego no Tsuki, and now we are going to try Toichi, which we have been curious about for a long time! Sweet and gorgeous ginjo aroma! The smooth mouthfeel is followed by a refreshing rice flavor and acidity, and then a pleasant lingering bitterness that finishes cleanly.

In terms of rice polishing ratio, this 49% polished rice ginjo-shu could be called a daiginjo. The aroma is subdued but gorgeous, and the nose is filled with the aroma of rice. The taste is gentle, but the umami is very strong. It tastes like chewed rice and has a clean mouthfeel with no lingering aftertaste. I drank it almost at room temperature, but I think this is the best sake. It might shine even when heated.

It's been a while since I opened the bottle! And it's not supposed to be a draft sake... I put newspaper under it because it's takoyaki. Shuwa shuwa~! And it's not fruity! They cut it with a bashful, and a little bit of sweetness comes at the end! And a hint of alcohol... Toichi is good after all!
