This junmai daiginjo-shu has a polishing ratio of 30% to 80% (38% polished rice).
It has a wonderful grapefruit-like aroma with a deep, structured flavor.
It is a classic example of Bon's Junmai Daiginjo-shu, with outstanding flavor whether chilled, on the rocks with ice, or lukewarmly heated.

Monday night drink with this special Junmai Daiginjo from Born brewery. It has an elegant fruity and full body notes. It has become one of my favourite sake drink.
As the label says, it was a calm sake with a rich flavor.
I would like to drink this with sashimi!
So we had it with sashimi of flatfish.
It was delicious.
I would like to drink it with Japanese food.
