The sweet, umami, and sour taste spreads, and the bitterness comes slowly. The lingering aftertaste is rather long 🥰.

The first bottle of May in the Shinshu Secret Sake Hanpukai 2025 Gold Course is Inogashira by Kasuga Shuzo.
It is a challenge sake from Inogashira, which is known for its delicious food sake.
It is fresh with an apple-like heady aroma and a hint of gas. It has a mild sweetness, a rich umami, a beautiful acidity, and a firm bitterness that finishes with a refreshing aftertaste.

It is an unfiltered unpasteurized sake with a little bit of slime visible.
It is very easy to drink with an impressive chirichiri-ness and sweet-sourness. ✨️
It is so crisp and light that it will be gone before you know it...
It's just right as a mealtime sake.
The aroma was fruity, but the sharpness of the sake was the main attraction 🍶 in a good way, the aroma and taste did not match!
When I checked the website, it says 'hazelnut flavor close to sesame' and it certainly could be close 🥜.
I'd like to taste it again next time!
