A friend of mine gave me a bottle of Chiyozu, which has a slightly bitter taste at the end, but it is a refreshing sake and does not interfere with food when drunk with it.

I knew this sake from my neighbor's store, but I had avoided it because of the dry image of the tiger label 😅.
I was surprised to find out that it's a mellow, sweet and tasty type of sake.
You have to try it to understand 🤔.
Purchased at the Yamagata Antenna Shop in Ginza.
It has a fresh ginjo aroma typical of nama-shu.
The taste is light and dry, but it is also mildly sweet and neutral.
The taste is smooth with a touch of alcohol.
1.8L ¥3,685 Alcohol content 17% Ingredient Rice/Polishing ratio Dewa Sanzan Kake rice and Koji rice both 55% Yeast used: Yamagata yeast Sake degree +2 Acidity 1.3 Amino acid degree 1.0 It is a limited edition and was available at a local liquor store, so I bought it immediately. It has a pungent taste due to some gassiness, but it is juicy and spreads well balanced with the umami of rice and sweetness. I will add my comments in a few days.
Clear and dry. It does not interfere with food, but has a fruity flavor. The menu includes tomato and tuna salad with sesame seeds, meat and potatoes, grilled striped hokke, and takikomi-gohan.
I bought it because it suddenly caught my eye.
I bought it without doing any research at all, but it is delicious!
The mouthfeel is pretty refreshing, but then the umami and bitterness come in a big rush.

The brewery is Chiyozu Toraya Co. in Sagae, Yamagata Prefecture. As a Hanshin fan, the brewery name and label felt familiar to me. The fact that it was a dry hiyaoroshi suited my tastes perfectly. I also liked the fact that the sake is made with rice grown in Yamagata Prefecture.
