Buy at Echio Winery. It's a pure, unpasteurized sake. It was left at room temperature for 24 hours due to unavoidable circumstances. The moment you drink it, you can taste the fruity sweetness that is typical of namaishu, but the rice flavor that is typical of junmai slowly permeates the taste buds. Koshiu is a nice town with two sake breweries!
