Flavor is lighter than expected. Big plum and some lychee. Texture is clean, smooth, and on the thinner side. Finish is soft and gentle, with lingering rose. A very nice drink by itself that would be perfect with nigiri or sashimi. Could be overwhelmed by meats and heavier, creamy foods.

At a drinking party. No time to write detailed notes and savor them. A light green apple-like aroma with little acidity. It tastes like freshly picked grapes from the green apple in the mouth. It is a light, refreshing and tasty sake. Perfect starter sake. Ueno Aun

@Funabashi's standing bar Last Sake Rice used is Hitogokochi from Gunma Transparent, refreshing mouthfeel typical of summer sake. The bitter aftertaste is also nice! It was a fitting sake to end the event. ‼️

This is a sake that the guest next to me shared with me. It's 35% refined rice step and 18% abv. It's easy to drink and easy to get drunk when you drink it. Doobashira is a traditional pressing method in which the mash is suspended by a cloth bag at the final pressing stage of brewing, so that the sake drips and filters into the doobashira below. The sake pressed in this way is also known as shizuku-shu (雫酒).
