My memory is getting fuzzy and it's getting more and more appropriate from around Hiroki😅.
Whenever I visit a brewery festival, I always want to stop by Dewa no Fuji!
The president of the company was there as usual.
We drank
Junmai Ginjo #1 (Hashwan)
Sake made with #1 yeast. The flavor was a little unusual, but I remember it was sweet and sour.
Junmai Ginjo Riquisimo
It is not listed on the official website, but it seems to be a new product.
It was gorgeous and light.
Riquisimo is a Spanish word that means "very tasty!
This brewery likes words like "Mamma Mia" and Latin words, don't they?
Junmai Namaishu Saiiro-iro
Sake degree +3
Rice polishing ratio 70%.
The official website says it's a summer sake. It seems to be refreshing, but sweet and juicy and delicious.
Junmai Daiginjo Hanakura
The name "Hanakura" is pronounced "kezo".
Polishing ratio 40%, Sake degree -4, Miyamanishiki used.
It must have been delicious!

Well, that part remains a mystery, but here it is 🎉.
With Miyamanishiki Shizukuri,
It is said to use No.1 yeast.
It has a berry-like flavor and is on the dry side 😋.
and it has no bitterness,
and it has no cloying taste, so you can drink it easily.

Dewa no Fuji Junmai Ginjo #1 Hashwan
Brewery in Yajima-cho, Yurihonjo City, Akita Prefecture.
Miyamanishiki" from Akita prefecture, 60% polished rice.
Brewed with Kyokai #1 yeast.
It has a calm aroma and a mellow rice flavor,
Juicy and fresh taste.
#Nihon-shu
The top aroma and the hint of aroma are fruity and sweet, but the latter half is quite alcoholic.
I think it would have been better to use a regular unfiltered raw sake.
After about 3 days, the fruity flavor has decreased, but it seems to have calmed down and the sweetness has increased.
Delicious. It was slightly sweet with a slight effervescence characteristic of nama-shu.
On the second day, the slight bubbles decreased and the sweetness increased, making it tasty again.

Last week I visited Dewano-Fuji at Hankyu Department Store, but I went to Umemoto Sake-ten in Nishinakajima because I thought I could find more variety at a special distributor.
(Note that they have moved from the location shown on the map of Sake-no-wa, and they have a corner bar inside after 4:00 p.m.)
I was a bit lost, so I asked the waitress and she let me try a sample.
Melon-like fruity sweet taste.
Slightly refreshing?
It was delicious, but Junmai Arabashiri seemed rarer, so I bought that one 😊.

I got this from my father-in-law.
It is delicious! I'm kind of happy when I find something that is not fruity and tastes good.
It has a rounded flavor and is fluffy and delicious and goes with any meal.
I wonder how much it costs.
I would like to buy it again 8/10

Dewa no Fuji Junmai Nigori Sake Oborozuki
The brewery is located in Yajima-cho, Yurihonjo City, Akita Prefecture.
Ginsan" rice produced in Akita Prefecture is polished to 70%.
The yeast is "AKITA Yukiguni Yeast UT-1".
Soft rice aroma, thick and full-bodied, with a gentle and smooth mouthfeel.

There are two types of this yeast, UT-1 is apple-based and UT-2 is banana-based. The apple type has a longer lasting aroma and still smells gorgeous after 3-4 days 🎶.
It is a combination of the sweetness of this alcohol and the juices 💕
This is the second sake using No.1 yeast. Raspberry aroma. Although it is not jungin because it is made with out-of-spec rice, the juicy sweet-sourness and umami are a good match!
