A quick drink at Stand Miyamachi 425 in Sumiyoshi Station before boarding the ferry for the Kyushu bullet castle tour 🍶. According to my prior research, there were a lot of Sake available, but today there were 3 kinds😅. If it's dry, I'll have this one 😀. I drank it like water, but I had no time to drink more than one glass.

I bought this on my first visit to Banshu Issen Store. I visited the store a little before 10:00 a.m., thinking it would open at 10:00 a.m. The store was closed and I reconfirmed online that it opened at 11:00 a.m.💦I was searching for the location of Niwata Shrine to kill time until 11:00 a.m. The store staff approached me and kindly let me enter the store even though it opened an hour before. We were allowed to enter even though it was an hour before the store opened. Thank you so much 😭 Fresh, juicy and gorgeous. The elegant sweetness of Aizan is also good. The balance of acidity is also to my liking.

Aizan" sake rice produced in Banshu While most Aiyama sake is generally sweet, this juicy sake has all the elements of acidity, sweetness, umami, and sharpness that seem to be a contradiction in terms. Aizan is characterized by its large heart white and easy solubility. It is carefully fermented at low temperature for a long period of time to make the most of its characteristics. The "Gravity System*" adopted by the new brewery has resulted in a silky texture, with a lingering sense of gassiness in the liquid, and an increased sense of freshness. 2023BY adopts "Shin Gin Seibai*". Gravity system: Sake is transferred directly to a lifting vat at the bottom of the slope by gravity alone, without using a pump, without first receiving the sake in a dripping vat after the top vatting. The next day, the sake is bottled in a clean room. By reducing the stress placed on the liquid, we have succeeded in bottling the sake in its original goodness. Shin Gin Mai (flattened rice)" is characterized by the efficient removal of proteins by shaving the rice in the direction of its thickness, which reduces the excessive removal of necessary components and tends to produce a lighter flavor even at the same rice polishing ratio. Banshu Ikkyo in a row. This time it is a Junmai Ginjo made from Banshu Yamadanishiki. Muscat-like aroma. Refreshing mouthfeel! The sweetness spreads gradually and is very delicious! Banshu Issen Junmai Ginjo Hiyoroshi Rated 4.5 Rice: 100% Yamadanishiki from Hyogo Prefecture (Shin-Gin milled rice), Polishing ratio: 55%, Alcohol level: 15%. Based on its dry character, it also has a perfect combination of modern sweetness, a moderate sense of maturity, and a slight gassy sensation. Banshu Ikkyo has been in a remarkable state of mind since the construction of a new sake brewery. Based on its dryness, it is excellent as a food sake.

This is my first Banshu Ikkan. I drank it on a trip and enjoyed it, so I bought it. It is Aizan, which just came out. The aroma is fruity and smells like apples! It has a strong flavor, but it also has a refreshing acidity. It has a spicy aftertaste, just like sake, It is easy to drink and is my favorite sake. It seems to go well with just about anything, but it went well with sweet and spicy sukiyaki. Pairing: Sukiyaki, cucumber, tomato and mozzarella cheese salad
