Smells like walnuts? Gorgeous cemedine, smell of alcohol after some time. Mild mouthfeel, then sweetness like three warm sugar, light pungency, aging aroma, as you swallow, the taste becomes milder, and gradually bitter from sweetness. Alcohol 20%, well 20% is intoxicating.

This is delicious. I sent a bottle of Yamagata wine to my cousin who lives in Nagoya, and this is my return gift. I'm satisfied with this sake because it has the feeling I like. It's good at room temperature. It rides softly on the tongue with a sweetness that flows easily. I like Halley's Comet.

Polishing ratio 49 Cooled in a vegetable room and served in a gulping cup. I prefer it cold because it tastes more sour when warmed. We did not try heating it up.

A birthday present given to me by a colleague at work. It has a fresh sake aroma and a mellow flavor in the mouth. The sweetness and acidity are well balanced with a rich aftertaste. It is delicious. Thank you.

Junmai hiyaoroshi. Miyamanishiki. The exterior is a nearly colorless crystal silver. The aroma is fresh and gorgeous. It has a very strong sense of cooked rice and glutinous rice, with aromas of dairy products such as apricot curd and fresh cream. Fruit is grapefruit and flowers are honeysuckle. Lime and iodine aromas as well. The palate is rather strong, with a full sweetness. Rounded, smooth acidity with mild bitterness. The balance is rich and mellow, with a sweet finish and a slightly long aftertaste. It has a solid weight and comes on quite strongly. It seems that it will not be defeated by strong dishes.

This was also a gift from my son's girlfriend and had been sitting in the fridge. The aroma is like a Daiginjo with apple and apricot added to the Ginjo aroma. Later on, there is also a slight scent of cypress, which is a little subdued, but combined with the soft mouthfeel, it is just right. It's been a while since I've had a Daiginjo! I'm so happy!

The aroma is lychee and vanilla, with a little cedar coming in later. It's soft and fluffy and sweet, but still has a bit of acidity. My son's girlfriend gave it to me and I was too lazy to drink it, so I let it sit in the fridge for more than a year.

A sake brewery representing Nagano Prefecture This time it's a new face sake! Just when you think there is a sake that is easy to make, they come out with a new face like this one. I think they are a sake brewery that is always inquisitive... This sake is made from Hachitan-Nishiki produced in Hiroshima. It is surprising that they chose rice from the very birthplace of sake, but the taste is... I was surprised by the watery sake I had never tasted before. The first sip was... It is delicious ‼️! Junmai Ginjo, fruity and refreshing. I'm drowning in sake again tonight. 🙂‍↔️

Paired with yurinye at a nearby machinaka restaurant 🤭 Great! 100% Miyamanishiki, Nagano Prefecture's preferred rice for sake brewing!
