There are several breweries in the mountains of Tokyo.
The aroma has a mild acidity on the nose.
In the mouth, there is a soft umami with mild acidity and a hint of sweetness.
It finishes with a lingering aftertaste of slight acidity.
It's as classic as the label says, but it's quite refreshing and delicious 🍶✨.

My favorite new sake from Kimasa. It's junmai, but it has a great aroma. Muscat type? It has a cucumber-like acidity and sweetness like Kuroryu. And it has a rough strength that is typical of new sake. Is this a Kimasa? It is surprisingly gorgeous. It is not like Kimimasa in a good sense. I met a new side of Kimasa.
This is the first time I saw this one! Kimasa. And it is a rare Tokyo sake!

Kisho, a souvenir from Seoto no Yu. Wow, a refreshing aroma of rice. The taste is rounded, with a soft sweetness and a pleasant, refreshing feeling that is typical of honjozo. It must be very hard to find unless you go there, I guess. So it is locally brewed sake because it is drunk and bought locally.
My favorite autumn sake from Kimasa. Soft, sweet aroma of rice. Slightly greenish. The taste is strong, with a solid core and a hint of sweetness. A pure rice sake with the quality and robustness that is typical of Kimasa.

This is one of several Junmai sake with different labels. Probably Miyamanishiki is used. The official description of Junmai sake is "Gohyakumangoku".

Purchased at Gransta Tokyo. Previously stated to be made with Miyamanishiki. The current version is unknown. It's usually delicious, and the best to drink it on the shinkansen on the way home.
