Sweet and sour. Not sour. It's tart. It's a cuddly acid. It has a strong character! Smooth aftertaste. Grapes. Astringent. Very nice. 88 points.

It is close to wine, but far away from it.

The fourth brewery at Parking Kitahama Hakkosho was a brewery that I once had at a sushi restaurant in Toyama, TAMAGAKU SAKE Brewery's TAMAGAKU!
This time it was ECHOES KEG DRAFT!

First, the aroma. Not much of an aroma!
In the mouth, the acidity is impressive, and there is a sense of gas and a little bit of astringency.
This is the first time I have tasted this astringent taste.
It's refreshing and fruity, like drinking a juice, and it's so bad that I could just gobble it up, but it's delicious!

Every sake from this brewery gives a unique impression.
Take a sip and you will be surprised. It is fresh, but has a tremendous acidity and bitterness. It is a bit hard to drink by itself.
It is understood that it is a food sake to be served with food. It goes well with strong dishes.
However, one day after opening the bottle, the impression changes considerably. It can be drunk on its own. It has a strong flavor with a strong acidity.

This is the first hiyaoroshi of TAMAYUYU!
Sake with a good sense of maturity and a strong umami flavor.
I thought it would be spicier, but it was more like a medium-bodied sake.
Just the right balance of acidity.
I have an image of TAMASAKYU as a sharp and unique sake, but the rest of their sake is solid and serious.
Uses Yuuzan-Nishiki, which is as juicy as it gets.
