Rice used is Comet The tanks are buried in the snow to mature the sake. It does not have a sense of maturity, but has a round mouthfeel and a crisp finish. It is a good summer sake.

This is the Junmai Ginjo version of the one we drank yesterday. It is still good. The taste is typical of Hokkaido. It has a light, umami taste. I took the liberty of making it "Hokkaido-like", but it's probably like that. Personally, I prefer the junmai-shu we drank yesterday.

Takasago Shuzo's Taisetsu Junmai Sake [Asahikawa] is only available in Hokkaido. The aroma is subdued and the taste is refreshing and dry. It is a good sake to drink with rice and water from Hokkaido. I have a colonoscopy and procedure on the 24th, so I will be sober for a week. The next post will be after the 1st of April 😭. Don't forget 😅.
