One of my absolute favorite sake. This particular sake is using a long lost rice variety called Nojouho. This rice was once considered one of the two major rice varieties for sake, along with the king, Yamada Nishiki. It almost completely disappeared in the 1940’s due to its notorious difficulty to grow. It lends a richness similar to Oomachi, but with the texture of Yamada Nishiki. A truly rare find from this incredibly traditional brewery.
