First, there was the taste of clear water, followed gradually by the umami rice flavor, and finally a tangy finish.
I felt that I wanted to enjoy sake alone for a while, perhaps because of the delicious water.
It was perfect with mackerel nanban. It was also a perfect match for the mushroom starchy sauce with wax gourd.
The last sake we had at Sushi Namba was Gen no Taki Junmai Ginjo by Koukokuharu Shuzo.
This was also the first time to try this sake from this brewery.
The first thing was the aroma. It smells a little sweet, doesn't it?
When you take a sip, you will find that it too has a strong mouthfeel.
It is very tasty with a strong sweetness and umami.
The bitterness and spiciness were not so much, and it was a very tasty sake that could be drunk smoothly.
We had a great time talking and enjoying the food and sake. Both my father and mother seemed to enjoy it very much and it was a very enjoyable evening thanks to Sushi Namba.
After returning to the hotel, we had our standard after-party while drinking brandy, my mother's favorite drink. Well, I drank too much from the first day.

When I warmed it up and paired it with mushroom cream croquettes, it was very tasty.
It's sweeter at lower temperatures, so maybe it's better to drink it with achiati.

This place has a good reputation for its sahimei, but I went out to visit Oyaji-san recommended by Kazuhiko Ota 🚌.
After quenching our thirst with Akahoshi, we started the first of three consecutive Hiyaoroshi ✨.
What impressed me was the smoothness of the throat or mucous membrane touch ❔ 〰︎
I guess it's the nature of the brewing water, but it's smoother than water 〰︎〰︎
The ginjo aroma is not very assertive but fresh, with a hint of maturity in the back 😌.
Very satisfying - perfect for quintessential sake 👍.
And I could definitely taste the cedar barrel flavor...
When I mentioned this sake at a sake store I visited the next day, the owner said, "I don't think they use cedar barrels...

Toyama hiyaoroshi
Easy to drink right from the first sip! I like the acidity a lot and it is fresh.
As the name suggests, it seems to have been stored in the Kurobe Dam, so it has a little bit of an aged feel to it.
The aroma of rice, acidity, and an aroma reminiscent of white wine 🍷The rice flavor spreads in the mouth and is accompanied by a crisp acidity 😚The throat is mild and would go well with cheese or other food. ❗️It goes well with a glass of wine. ❗️
A little sweet on the palate, but I wonder if it is dry in total.
I wonder what difference this makes that it is not pure rice.
It is very easy to drink!
I can taste the bitterness in the flavor, which I like.
Toyama's sake was also amazing. Phantom Taki.
It has a Niigata-style base, which I like, but the sweetness is moderate and the freshness stands out.
The sweetness was also surprising with a subtle almond-like aroma.
Toyama is a great place! I couldn't help but mutter to myself.
And the alcohol taste after going down the throat is gentle and characteristic, as if it had been designed on purpose.
(I can't describe this part well, so I need to practice.)
I am looking forward to drinking it again tonight.
I want to drink it again after I finish it! It is an excellent sake that will remain in your memory even after you finish it.
