Gentle Ikizakushi Dry Taste
The mouthfeel is gentle, soft and sweet and sour. But from there, the delicious spiciness and lactic acidity that is just like a fresh brew spread out. It sublimates into a hint of sublimity at the end, and when you notice it, it's gone.
As you can see from the number "+8" on the sake meter, it's pretty dry. But it's easy to drink and the flavors are fantastic. I wouldn't say it's for beginners, but it's delicious.
This sake is the personal brand of Hirotsugu Hatanaka, the toji of the Yamaoka Shuzo brewery in Hiroshima who brews Zuikan. The flavorful characters on the label were written by the brewer's son, Duuta (who was in the second grade at the time). That's a very thoughtful note, isn't it? His son is in high school now. It won't be long before he can drink sake with his own name on it.
If I were to use a Ghibli analogy, I'd say Mr. Kita from "Earshot". He's a fellow musician of Mr. Nishi, Seishi's grandfather, and Mr. Minami, who wears a bow tie with a moustache and glasses. At first glance, he looks like an ordinary old man, but if you look at him closely, he's very tasty. His voice is Producer Toshio Suzuki, an evil puppet master of Ghibli. Oh, "evil puppet master" is a big compliment. If he hadn't been able to manipulate Miyazaki, there wouldn't have been so many masterpieces made.
