First brand I've ever had.
I was curious because it was listed as brewed in 2013
(Just after opening the package)
Drink cold
Slightly yellow in color, not cloudy.
Slightly mature aroma.
In the mouth, it has a heavy richness with a savory aroma.
A refreshing dryness appears later.
The lingering aftertaste is long, and the richness remains in the mouth for a while.
The aftertaste is surprisingly refreshing.
There is no impression of aging at all, only a sense of maturity.
When I paired it with blue cheese and grilled eggplant with miso, surprisingly, the taste of the sake did not assert itself and the flavor of the side dish was more strongly felt.
I didn't feel much pairing, but I wonder what kind of snacks would go well with it.
As others have posted, it certainly tastes similar to apricot bean curd.
I would like to try it heated next time.
