This sake is orikarami, which is a fresh sake.
I had an image that Kinwedding had a rather classic taste, but this one is easy to drink and has a modern feel.
It has an apple-like acidity, but it is also dry.
A local version of our famous local sake, Juemon Junmai Unfiltered Unrefined Genshu.
It was at the bottom of the bottle, with a little less than 2 gou left, so it was at a good ripeness. The aroma is fruity, as strong and clear as Yamori's. The flavor is firm, with a hint of umami. It has a strong umami, a slight acidity, and a lingering astringent taste. It is an easy-drinking sake.
