The last one today is Togakushi in Nagano. This was also a first. It was a little sweet, but light and refreshing. I am starting this week in a good mood.
Togakushi Junmai Ginjyo Nama Zume (1st)
It is quite refreshing and seems to go well with sashimi.
It's a little short for me, but it's hard to find in Tokyo and the cosmetics are great (under 1500 yen for 720ml).
Togakushi Junmai Ginjo (2nd page)
This sake has a sweeter taste than "Togakushi Junmai Ginjo Namazume" and is my favorite (modern) sake.
Probably because it is fresh and juicy due to the fact that it is not fire-aged.
It has a very mild mouthfeel. Since it is a Nagano sake, you would think it would be spicy, but you would be surprised at how soft it is. It has a relatively long aftertaste, so you can enjoy it all the way to the end.
