Togakushi Junmai Ginjyo Nama Zume (1st)
It is quite refreshing and seems to go well with sashimi.
It's a little short for me, but it's hard to find in Tokyo and the cosmetics are great (under 1500 yen for 720ml).

This sake has a sweeter taste than "Togakushi Junmai Ginjo Namazume" and is my favorite (modern) sake.
Probably because it is fresh and juicy due to the fact that it is not fire-aged.
It has a very mild mouthfeel. Since it is a Nagano sake, you would think it would be spicy, but you would be surprised at how soft it is. It has a relatively long aftertaste, so you can enjoy it all the way to the end.
This is a brand that I haven't seen very often.
I picked this up when I went on a trip to Nagano, thinking that I didn't go to Togakushi because of time constraints.
It has a gentle sweetness that you can feel the flavor of the rice.
In the second half, you can feel the spiciness.

A green apple-like aroma is discreetly fragrant.
Thick mouthfeel. The acidity is gentle but fresh. The sweetness is clearly perceived, but the impression is simple and clear, and it seems to penetrate the tongue, yet it is light and refreshing. It has a simple but addictive sweetness reminiscent of tortoiseshell candy or syrup.
This is a bottle that is tannic, but has more potential than youthfulness. Personally, I am looking forward to the autumn Hiyaoroshi.

Togakushi is one of the best drinks to buy when you see it ✨
(I rarely see them here, lol.)
It's made from Yamae Nishiki, but it has a gorgeous ginjo aroma and sweetness, with a little bit of sourness and bitterness that is typical of Togakushi😊.
It's one I'll continue to support!
